Cooking sushi rice
I strangely found cooking sushi rice charmingly relaxing pastime. You have only to concentrate in certain small steps at a time: measure the rice, rinse the rice, cook the rice and spice the rice.
As you may guess, the rice is currently cooking and I’m waiting with the vinegar, salt and sugar for the last step. After that I’ll start to prepare the fish and vegetables. It’ll be fiesta tonight!

I’ve never tried sushi. I’m afraid it’s just not something you can get where I live. It’s the in-thing down London way, and I suspect I could probably find it in Birmingham which is about 30km from here (Walsall) but I don’t get over there very often. I like rice and do a fair bit of wok cooking and preparing my own Chinese-style dishes, in fact it’s my preferred method. I also like fresh tuna so I think I would probably enjoy trying sushi if I get the chance. I would have to try it first before attempting to make it myself.

If you are going to London someday, try out Misato at Wardour Street. You have to queue to get in, but the food is good, portions are big and it’s cheap compared to other Japanese restaurants in London. Check out a review on london-eating.co.uk.
Another good choice is Satsuma, also in Wardour Street (near Old Compton Street). It has been reviewed in the same place, too.
Regarding our sushi dinner, it was a success. I was a little nervous, as I cooked the rice five hours before serving, but fortunately it stayed moist under foil.

Thanks. I’ll check the reviews but I have to say that London is not my favourite destination. I’ll have to have a look around Birmingham and see what’s on offer there.

Just use short grain rice as it is the same… The better the quality tho, the better the final result…
